going RAW

I starting watching a documentary called: Food Matters. In the film, it claims that most illnesses in the USA and even around the world are due to lack of vital nutrients and minerals. David Wolfe, (who is considered one of the world’s top authorities on natural health, beauty nutrition, herbalism, chocolate, and organic superfoods) advocates for a diet of at least 51% raw food combined with other nutritious, organic, local and seasonal food. The most amazing thing about raw food is it’s ability to heal!

“In November 2007… Gabriel Cousens – one of the most respected living raw food diet gurus – runs a pilot for diabetes. The results are ridiculous! It proves that healing with raw food is possible! Within a week! A man with 20 years history of diabetes and a woman with blood sugar levels as high as 700 could throw away their medication within ONE week of green juice fasting…” The power of good food is truly amazing.

So why eat raw food?
According to Raw Food – How To, there are 10 advantages:
1. Raw foods, especially when organic, seasonal, or local, are better quality
2. Raw food has more flavor which means using less condiments that can over stimulate other organs or even irritate your digestive system
3. They take very little preparation
4. When eating raw, there’s a very small change you will burn your tongue or fingers!
5. Cleaning up afterwards is a breeze! Throw the scraps into the compost and your good to go
6. Eating raw food can reverse or stop the advance of chronic diseases like cancer or heart disease. ***Cooking food creates free radicals which can lead to cancer. When you lower the amount of free radicals in your body, you lower your risk of cancer!***
7. Raw food can protect you from acute diseases like colds, flu, measles, etc.
8. With the correct amount of raw food, you will no longer suffer from heartburn, gas, indigestion, or constipation
9. It is environmentally sound!!!! Most raw foods come without packaging, meaning your carbon foot print drops.
10. Eating raw saves you money!!!! NO need for vitamins, pots/pans, appliances, doctors bills, and drugs.

Raw vs. Cooked Food
As Americans, most of our health issues revolve around the food we eat. “The U.S. Senate Select Committee on Nutrition and Human Needs concluded in its 1978 report entitled “Diet and Killer Diseases,” that the average American diet is responsible for the development of chronic degenerative diseases such as heart disease, atherosclerosis, cancer, diabetes, stroke, etc.” Our gastro-intestinal tract, or G.I., breaks down the food we eat and uses it to feed our flesh, blood, actions, thoughts and feelings. The G.I. does this with the help from our salivary glands, pancreas, liver, and most importantly with the help of enzymes.

Enzymes are “delicate dynamos.” They can be destroyed at temperatures of 105 degrees, which means they might not even survive steaming. However, they are also powerful, specialized proteins because they speed “burning or building reactions in the body according to need.” Our three primary digestive enzymes are protease, lipase, and amylase which digest protein, fat, and carbohydrates. Over time, like other processes in the body, the enzymes break down as we get older. Especially with our “American diets” of over processed and cooked food, we speed up that degeneration every time we eat. “Dr. Francis M. Pottenger’s nutritional studies have shown that a regular diet of cooked or canned foods causes the development of chronic degenerative diseases and premature mortality. Professor Jackson of the Dept. of Anatomy, University of Minnesota, has shown that rats fed for 135 days on an 80 percent cooked food diet resulted in an increase pancreatic weight of 20 to 30 percent.” What’s even more amazing about enzymes is that doctors can’t duplicate them! They are “the stuff of life itself.”

Cooked food will pass through your G.I. more slowly than compared to raw food. This leads to fermentation of your food which puts poison into the body. Colon cancer is the number two killer in America which can be caused by enzyme-deficient cooked food. “Prolonged intestinal toxemia may manifest the following symptoms: Fatigue, nervousness, gasto-intestinal discomfort, recurrent infections, skin eruptions, hormonal disturbances, headaches, arthritis, sciatica, low back pain, allergies, asthma, eye, ear, nose and throat disorders, cardiac irregularities, pathological changes in the breasts, and so forth. All of these conditions have been shown to respond to therapy directed to correcting the bowel toxemia.” Good food is key to our health and happiness!

I personally am striving to make the change to at least 51% raw food. I went to Cornucopia, the local health-food store, and picked up a copy of Superfoods by David Wolfe. The book describes all the benefits of changing to a raw diet, lists the world’s best superfoods, and has plenty of yummy, raw recipes to help you start.
